yummy egg recipe!

tired of all those hard boiled eggs already?

i have a recipe that will knock your socks off, or bunny slippers, or whatever.
this is a family favorite.
we actually run out of eggs so fast from making these that we end up boiling more!

ok first please note that the butter and the oregano are very important - if not used, you my as well throw your eggs in the garbage. ok, now that we've got that out of the way...

i have no idea what to call these - so i just call them egg muffins :}

for one serving or two kid's servings of this recipe you will need

  • 1 english muffin - we like Thomas's
  • a pat of room temp. butter
  • 1 small "on the vine" tomato
  • 1 hard boiled egg
  • 1-2 slices of mozzarella cheese
  • sprinkle of pepper
  • sprinkle of oregano
  • a toaster oven and a love for good food

directions:
split your english muffin in half and spread butter on
add tomato slices
slice your egg and add to muffins
add cheese
sprinkle pepper and oregano
pop into the toaster oven. i set mine for medium dark.

the cheese melts and the muffin is crispy and it is pure deliciousness :)

i usually load up the toaster oven with 6 of these puppies at a time,
they go like hot cakes!
and yay, a delicious healthy breakfast, brunch, or lunch for you!

The Hunt

renew. life. beautiful. messy. cracked. imperfect. begin.
words that describe what we CAN see.
only He is perfect.

He has Promised.
this we can't always see.
 so we hunt.
we gather what we can.
His beauty and gifts surround us.
gorgeous hills, beautiful trees, happy children, friends, (fill in your words)
all the Promises await... love, life, joy, peace, perfectly beautiful, renewed beginning.

what are you hunting for?

Sponsor Love + Giveaway - Bibeez Baby

Meet Frances of Bibeez Baby..
1. Tell us a little bit about yourself and how you got started in the biz of sewing.

My name is Frances, and I am an Air Force wife to Russ and a Stay at Home mom to my 11 month old son, Nate. I learned to sew at a young age, while home but never really stuck to it for any length of time. My grandmother (Mimi) makes the most beautiful quilts, and I have admired them for so long and even attempted to make a couple. The problem is- I never had the patience (or attention span for that matter) to complete one. After having my son I started to sew again in order to have a little time for myself. My projects started out as bibs with snaps because my son would pull the "velcro" ones off the moment I put one on him. Then, I added in some patchwork diaper bags and clutches which made my little hobby grow quite rapidly into what Bibeez Baby is now. In case you are wondering- I still can't make a full sized quilt.
2. Where do you draw inspiration from?

I am inspired by so many things! For starters, I am inspired my my little boy! Without that little booger I wouldn't be here! My husband inspires me because he is full of incredible ideas, things that I could NEVER think of. I am inspired by the women who have gone before me and a few who are going with me. I have some lovely family role models, who've taught me how to balance home, work and creativity. And a few encouraging cousins and friends never hurt anything :-) To sum it all up- I am inspired by what God has given me. My Husband and son, my family and friends, my circumstances; all inspirational and all from Him.
3. What does a typical workday look like? -this includes family ;)

My day starts whenever Natee wakes up. While he is having breakfast I have a quick date with the treadmill. Russ heads to work and Nate and I play til his nap time. His 1st nap of the day is when I do the "computer part" of my business. You know, writing my blog posts, reading other blogs, ordering supplies etc. Then when nap time is over we play again and have lunch. Then we play some more! Now that Spring has finally arrived we can start spending more time outside which we are THRILLED about. If I have to run any errands around town, this is the best time to do it. Then it's time for the 2nd nap of the day. THIS IS WHEN I SEW :-D Russ usually arrives home sometime after the Little One wakes up and then we have dinner. Dinner is followed by a little more play time. Then if Russ is home he does the whole bedtime routine (bath, storytime, etc.) I use this time to sew as well. After Nate is asleep the rest of the night is spent watching our favorite T.V. shows, sewing, tidying up the house, things like that. Then I SLEEP!

4.  If you could travel to anywhere in the world, where would it be and why?

If I could travel anywhere it would be Crete. Let me tell you why. My husband and I used to live in Oklahoma. One of my greatest friends also lived in Oklahoma and as her "Bachelorette Party" her mother and I took her to Eureka Springs, Arkansas for a relaxing weekend. It was quiet, quaint, and just what we needed. While we were there we went to a cute little spa where we met the most unique woman EVER! She had just gotten back from Taiwan where she was studying and developing her own method of massage therapy. Anyhow, in all her travels she said the most glorious place she had ever been was the island of Crete. I have wanted to go ever since.

5.  What is your favorite dessert?

Without a doubt- my Mimi's cheesecake. It is unlike any cheesecake you have ever had. Mmmmmmm :-)

I love Frances's shop! Don't you love her style?!! Perfect for my baby and the perfect place to shop for gifts for those new arrivals!
