weekly menu planner {back-to-school week}


this week i am doing a back-to-school series on the blog!
i get excited every year at this time, even though i am sad to say goodbye to summer, i look forward to more structured days and weeks. the new beginnings with new classes, books, teachers, and friends. + i love the crisp orangy beauty of fall.

here are some super fun lunch ideas for all ages just in time for back-to-school!

personal pizzas recipe!!!
These handheld pizzas are the perfect snack or fast meal. Have your young chefs pair the Breville pie maker with ready-made marinara sauce, grated cheese, a bit of meat or vegetables and pie dough—they can create their own favorite combos!
Ingredients:
1 batch basic pie dough (see related recipe at left)
3/4 cup grated mozzarella cheese
1/2 cup tomato sauce
3/4 cup assorted prepared pizza toppings (diced pepperoni, cooked and drained sausage, sautéed onions, peppers or mushrooms, and/or black olives)
Directions:
Divide the pie dough in half, shape each into a disk and wrap separately with plastic wrap. Refrigerate for at least 2 hours or up to overnight.
In a small bowl, combine the cheese, tomato sauce and desired toppings. Set the filling aside.
Preheat a Breville electric pie maker according to the manufacturer’s instructions. Line a baking sheet with parchment paper.
Let the dough stand at room temperature for 5 minutes. On a floured surface, roll out the dough into a round about 1/8 inch thick. Using the larger side of the circle cutter, cut out 4 rounds, rolling out the remaining dough disk and rerolling the scraps as needed. Transfer the dough rounds to the parchment-lined baking sheet. If they become too warm or soft, refrigerate for 10 to 15 minutes.
Open the pie maker and assemble the pizzas according to the manufacturer’s instructions, using the dough rounds for the base of each pizza and 1/3 cup filling per pizza. Close the lid on the pie maker, ensuring the latch clicks into place, and bake until the dough is cooked through and golden brown, about 10 minutes. Using a mini-pie lifter, a nonstick heatproof spatula or tongs, carefully transfer the pizzas to a wire rack and let cool slightly, about 5 minutes, before serving. Makes 4 individual pizzas.

Peach, Tomato, and Ricotta Sandwich
Ingredients
2 tablespoons ricotta
2 slices whole-grain bread, toasted
3 slices tomato
3 slices peach
2 slices red onion
Sea salt
Extra-virgin olive oil
Fresh basil

Directions
Spread ricotta on bread and top with tomato, peach, and onion. Sprinkle with salt and drizzle with oil. Top with basil.

Crisp Prosciutto, Lettuce, and Tomato Sandwich
Ingredients
2 slices prosciutto, each torn into 4-inch pieces
1 Tbsp extra-virgin olive oil
2 slices seven-grain bread, toasted
2 lettuce leaves
2 slices tomato
1/4 avocado, sliced

Directions
Heat oven to 400 degrees. Arrange prosciutto pieces in a single layer on a baking sheet. Brush with oil and bake until crisp and deep golden brown, about 9 minutes, rotating halfway through.

Top one slice of toast with lettuce, tomato, avocado, and prosciutto. Top with second slice.

Vegetarian Greek Salad
Ingredients:
1 lb tomatoes
6 oz vegetarian feta cheese
3 tbsp olive oil
salt and pepper
half a cucumber, peeled
10 black olives, halved
1/4 red onion
1 tbsp white wine vinegar
2 tbsp chopped marjoram

Directions:
1. Quarter the tomatoes, slice the cucumber and dice the cheese.
2. Place in a bowl with the rest of the ingredients and stir well.

Quinoa, Butternut Squash & Kale Salad
Makes 4 to 6 servings as a main dish.

Ingredients:
1 1/2 cups quinoa
3 cups water
2 teaspoons olive oil, divided
1 onion, chopped
2 garlic cloves, minced
1 1/2 cups peeled, cored and diced butternut squash
1 1/2 cups roughly chopped kale (previously washed and cleaned)
2 teaspoons fresh thyme, chopped
vinaigrette (recipe here)

Directions:
In a large pot, bring the quinoa and water to a boil, reduce the heat and simmer, covered until all the water has been absorbed (about 20 minutes). Remove from the heat, fluff with a for and place in a large bowl to cool for 20 minutes.
In the meantime, heat one teaspoons olive oil in a large skillet, add the onion and cook until it turns translucid. Add the garlic, butternut squash and kale. Cover with a lid and cook for about 10 minutes on medium-low heat. Remove the lid, check that the butternut squash is tender but not mushy or hard when you poke a piece with a knife. Add the thyme and continue cooking until the all the liquid creating by the cover has evaporated.
Let cool to room temperature. Gently fold the cooked quinoa and the cooked vegetables together along with the vinaigrette.
Serve room temperature or cold.

Strawberry and Avocado Spinach Salad
Ingredients:
1 clove garlic (grated)
1 teaspoon honey
1 teaspoon Dijon mustard
1 tablespoon raspberry vinegar
1 tablespoon balsamic vinegar
2 tablespoon olive oil
1 5 ounce bag baby spinach
2 handfuls strawberries (sliced)
1 avocado (peeled, pitted, sliced)
1 handful fresh peas (optional)
2 slices bacon (cooked and crumbled, optional)
1 handful blue cheese (crumbled)
1 handful pecans (chopped)

Directions:
1. Mix the garlic, honey, mustard, vinegar and oil.
2. Assemble the salad and toss with the dressing.

family workspace redo!

i was using a regular desk, but quickly ran out of space so we tried these folding tables. the cloth drove me crazy, but the look of the folding tables uncovered drove the surfer guy crazy.
i decided to start looking at dining tables instead of desks for the length and the depth they have. i wanted to be able to sew, blog, iron, write letters, cut prints, design, help my girls with homework, scrapbook, draw, ponder, plan, cut playdate cards, package, ship, and learn all at my desk.

the basket on my desk holds file folders, journal, 
the flowered box holds scissors, pens, pencils, and gluesticks.
my "desk" measures 84 5/8 inches long

at work: ironing and shipping out an order will updating my mac to mountain lion.

i love the cart!
  • there is a drawer under the printer that holds my stapler, 3 hole punch, ruler, camera USB cord, tacks, and printer ink - i love not seeing all these things out!
  • i kept a cafeteria tray to set printer papers on when printing multiple things, and a little stack of notepads. 
  • i have art supplies in buckets for the kids - crayons, chalk, and paint brushes with a roll of art paper behind.

behind the scenes...
deciding on the table was easy, it has a super smooth top, i love that it's white and it was the perfect size. the chairs took me forever to decide on, my little shopping partner for the day, Francesca, was growing impatient with my wavering between styles and colors, "if they only had an aqua or turquoise swivel!" i had said. there was a turquoise folding chair that was great but i could just see the boy getting snapped up in it. i liked the green, but i worried about the green and my red accessories looking like Christmas all the time, but Francesca reminded me how cool it would look with the aqua i have and the white desk - she's savvy. once we decided and wrote our numbers down we went to the warehouse - if you've never been to an IKEA (you are slightly deprived, something to look forward to someday for you) there is a showroom and you write down the aisle number and bin number of where to find your stuff in their warehouse. we got to the warehouse grabbed the forklift-like cart and found our items and loaded them. 
this is where i realized i needed a man to help, but my stubbornness prevailed and with a rush of adrenaline i was able to load the heavy items into my cart and slide them into the back of the swagger wagon. once we got home i thought i could open the box of the dining table and unload small pieces a bit at a time... nope. it was the table top in one box and the legs and leaf in another. the top was impossible for me to unload without that cool forklift-like cart at home. so i knocked on the door of my barbie-like neighbor and she foolishly, and a little over enthusiastically, said, "of course". i told her my plans to unload it bit by bit didn't work and to let me know if it's too heavy. we carried it into the house successfully with two stops along the way. we both almost died. my arms were sore for days after. i felt guilty and later made her and her roommate chocolate chip cookies. the surfer guy usually works super late and i didn't want him to come home to more work, my plans were to set everything up and then have dinner on the table for him. however, my plans don't always go so well. at least i was able to get started putting it together with the help of a certain 3 year old boy, he loves tools. and i had put dinner in the oven already, successfully heating up the house to a sticky and cranky 87 degrees. boxes were everywhere the table was put together and standing in it's place, as the boy and i were putting the cart together, in walked the surfer guy home early from work, on the phone, tripping over boxes into a hot house with a sweaty, disheveled wife and a boy playing with his father's tools. a blank stare and he headed upstairs. well, the boy and i cleaned up, got everything put away, and got dinner on the table. all was well, just not exactly as planned - he only comes home early when i am not ready for him, hahaha. does that ever happen to you? does any of this sound familiar to you or am i the only capricious wife?

we are on transworld's coverage of the event.

the lifetime achievement award went to Sean Collins founder of Surfline, may he rest in peace. Sean was a great man, father, and husband. he leaves behind a legacy for all those who enjoy the ocean.

the environmentalist of the year was Jean-Michel Cousteau, Jacques Cousteau's son who has continued his father's legacy and educates children and adults around the world about the ocean.

the waterman of the year award went to big wave surfer Shane Dorian. Shane is a great guy who's passion is simply to find the biggest waves in the world and ride them. Shane is inspired by other surfers, and is a huge influence in the surfing world.

SIMA continues to raise money for many ocean charities around the world. as of last weekend they have raised a total of over $6 million for the ocean. learn about SIMA and waterman's weekend here.

the auction was so fun! the dinner the Ritz created for us was insanely delicious. 
the weather was fabulous. the date night was priceless.

What I Love Wednesday {No. 81}

i love books. i have really gotten into reading. it's like a hook. i'm drawn.

i relax each night quite late after web designing/coding, putting the kids to bed, cleaning, web design some more... then i sit on the chair and a half with tea or cold water, tuck two pillows behind my back, put my feet up, and open my book. i used to read about a book a year and enjoyed it but i moved so slowly. so i joined a book club 2 years ago and read a book about every 6 weeks for about 6 months, then we moved. i made a goal to read 10 books this year which was a big jump from my normal progress. so far i have read 8 books this year! i am ahead of schedule, yay! i am on goodreads if you want to see my books and aimless reviews. i am currently reading The Passage... i do not know why, however, i can't put the book down.
reading each night helps me get super sleepy;
after an hour or so i just want to pass out! 
i think a good book is like a friend, beautiful in many ways and i am happy to see it and can't wait to hear what it has to say. i'm familiar with the characters and their quirks, so i become involved, invested in this "relationship".
it's also like therapy, there are so many people broken in many different ways - the human condition. the book is there for you whenever you want to open it. it calms me at the end of the day - a harmless addiction.
and it's like an ocean's waves, sometimes calm, sometimes tumultuous. an intriguing pull of emotions (hopefully)
slang seah for national geographic
for the record i am a hardcover reader, not an e-reader. i read one book on a nook and it's just not me. i love feeling the pages in my hand, physically seeing my progress, smelling the paper, and holding it's weight. i love walking into libraries and book stores and beholding the array of spines and vast amount of volumes - it's like being surrounded by love to me.
have you ever noticed that authors sometimes have a character who is really into books? lately it's in every book i read, i think it's their love for books revealed in their writing.
anyway this blog post was not meant to be a book but it seems to be on it's way to being one so i'll stop here :)

hunger games party on a shoestring

the DVD release for the hunger games movie is this saturday!
have a DVD release party! decorate, watch the movie, do these fun activities, and eat the food from the hunger games!


invitation:
attendance is mandatory!
made in district 7 (trees, lumber = paper)
use the font from the movie; bank gothic.

  • print out or purchase movie/book posters to hang
  • copy the mockingjay from the cover and cut it out and
  • hang up mockingjays around the party
  • have toy parachutes attached to your party favors

  • like the oddly bright citizens from the capitol
  • like Effie! haha
  • like Katniss, Peeta, Gale...
crafts & games:
  • make iron-on tee shirts with the mockingjay or the words: "may the odds be ever in your favor"
  • make bookmarks from cut pages
  • to really save money you can print out the mockingjay and trace it onto a white tee shirt (or other things) with a sharpie. 
    • for my daughter's thick shirt i had to hang it on a window for light to see what i was tracing since i don't have a light box :)
    • pin a target on a wall or better yet, have a stuffed animal set up to shoot toy arrows at
